Jujube belongs to the category of deciduous shrubs or small trees, with smooth and hairless branches equipped with paired thorns. The leaves are oval-shaped, with finely serrated edges and three basal veins. The flowers are yellow-green, bisexual, clustered in the axils of leaves or in cymose inflorescences. The fruits are mostly oblong or round, green when immature, and turning dark red upon ripening. The flesh is thick and sweet, containing a hard, spindle-shaped stone with sharp ends. Jujube can be consumed fresh or made into dried dates. It is rich in various vitamins and minerals, and is also a good medicine for nourishing blood, calming the nerves, tonifying the middle, and benefiting qi.

The Jujube color sorter is a professional device used for screening Chinese-dates. The Jujube are fed into the color sorter at a constant speed by a conveyor belt. Once they enter the recognition area, a high-speed camera takes a photo of each Jujube and transmits the captured color information to an intelligent image processing system. The system compares the collected color data with preset standard parameters to determine whether the Jujube is qualified. If a Jujube with a color that does not match the standard is detected, the system immediately controls the high-pressure air nozzle to open and eject a high-pressure airflow to blow it off the normal conveying track, thereby achieving the separation of high-quality and low-quality Jujube
